Making Your Yummy Irresistible Monday Dinner – Gizdodo

Until recently I didn’t know there was any meal called gizdodo and boy oh boy, ever since I took my first fork in January, I haven’t been able to get over it.

Gizdodo is a funny mix of gizzard and plantain, fried of course and it’s a great way to enjoy your ever inviting plantain. You know plantain is bae.

What is needed?

Gizzard

Plantain

Tomato sauce (sachet or tin)

Onion

Garlic/Ginger

White Pepper/ blended dry pepper

Bell Pepper

Groundnut oil

Seasonings (Thyme, Knorr, Salt)

The making:

Boil gizzard with salt, pepper, any other seasoning and some chopped onions in a medium pot until tender.

Add oil to the pot/ saucepan. Heat on medium high fry the gizzards for about 5-10 minutes. Remove and set aside.

In a medium saucepan, add some oil, then add your chopped onions, garlic, curry, paprika. Stir for about 3-5 minutes.

Pour tomato sauce, white pepper and gizzard, then bring to a boil for about 10-15 minutes. Remember to stir occasionally to avoid it burning.

Add green onions and season to your taste.

At this point, fry your cut plantain (make sure they are in cube form) and when done, add to your already sitting gizzard mix.

 

Make sure to stir and then plate immediately.  It’s best served hot.
