Making The Lazy Dinner – Stir Fry Chicken Sauce And Glass Noodles

This is my specialty as I’m always lazy and tired when I get home from work. No I’m not married but I love to cook and eat good food, especially at night and what better food to eat than my easy to make glass noodle and chicken sauce.

Whats needed for this 30 minute meal?

Chicken strips (as much as you want)

Green, Yellow and red bell peppers

Garlic

Soy sauce

Sweet chill sauce

Canned tomatoes

Seasoning – knorr cubes, salt

Carrots

Green bean peas

Onions

1 Packet of any glass noodles of your choice (this will serve 4 people)

The process:

First of, marinade your chicken strips in soy sauce, garlic and onion. Refrigerate for about 15mins, then remove chicken.

Heat 2 tablespoons vegetable oil in a pan over high heat. When oil is very hot, add half the chicken and stir-fry for 2 minutes. Remove chicken and set aside on a platter. Add 2 more tablespoons of vegetable oil to the pan and repeat with remaining chicken.

When everything is well sauteed, pour the chicken back into the pan, add garlic and chicken stock. Allow to cook for about 3 minutes then put your carrot, sliced peppers, remaining onions and peas.

Cook and stir as needed, until everything has cooked through and liquid has been absorbed. You are looking at about 6 to 8 minutes.

While the sauce is cooking, put some water in a pot and bring to a boil. When you are sure it’s boiling, pour your glass noodles and cook for about 5 minutes, or until it’s soft enough, then set aside.

As soon as your sauce is ready, serve with the noodles and enjoy your meal.

Please note: I like to fill up my pan so sometimes I use beef and prawns (same process, just stir fry together with the chicken).

If you don’t want the glass noodles, you can have normal pasta or basmati rice. But make sure you serve with my fav drink, Ribena….lol….
